Ingredients:

Salad:

  • 1 bunch kale, ribbed and chopped (I use dinosaur/Tuscan kale)
  • 1 medium head radicchio, chopped and core removed
  • 1/3 cup walnuts, chopped
  • 1/3 cup parmigiano reggiano, shredded
  • 2-3 tbsp dried cranberries, optional

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 garlic clove, minced, optional
  • 1 tbsp maple syrup/honey, optional

Instructions:

  1. Add all the salad ingredients in a bowl and toss to combine.
  2. Add all the lemon dressing ingredients to a mason jar with a lid and shake till combined. Alternatively, you can use a small blender if you prefer a smoother consistency
  3. Drizzle the salad with the desired amount of dressing. Enjoy!

Notes

  • Refrigerate leftovers for up to 5 days
  • I prefer dinosaur or Tuscan kale for this salad, but any kale will work.
  • Parmigiano Reggiano is delicious, traditionally prepared, and authentic parmesan cheese from Italy. You can find it at most grocery stores.
